Moving here all those years ago was a very hard decision as I left my Alberta,
Canada family and friends.
But being a foodie and now Chef living here in California ,
well fantastic choices is all I can say for food in general.
A beautiful sunshine state that produces so much great food.
Choices for the most part are endless and creating a menu
for my clients is so much more exciting and tasty for them.
When I prepare something sweet for my family or client I usually try to use some sort of seasonal fruit. Many of my clients are watching what they eat (dietary or medical) and still want to enjoy a treat of some nature.
Using fresh strawberries with some citrus juice allows the fruit to marinate.
Adding some cinnamon for another dimension of flavor is simple and very refreshing.
(I used a squeeze of orange here for this client. )
Another client favorite that is a bit more involved
but simple and delicious is my rustic apple tart.
With some freshly grated cardamom mixed into the sweet sauteed apples, a sprinkling of brown sugar added to help caramelize them some and a squeeze of fresh lemon juice and you've got a very flavorful dessert en-wrapped in some simple flaky dough. Add some turbinado sugar for some crunch and yummy.
Sweets can be simple and fruit related, Trying to teach my younger daughter that.
