Easy Summer Dinner Ideas

Like most families coming up with ideas for a meal , (especially dinner)

can be a daunting task.


Eating the same foods is easy but gets boring in my

opinion.


Summers I think about BBQ, picnics , beach time and holidays.

Kids are out of school and there is a different vibe driving the day/evenings.

Foods that come to my mind are...

crisp salads, burgers , grilled chicken(meats) and a abundance

of vegetables. Easy foods that don't require much prep perhaps and easier clean-up. Foil packets, one pot meals kind of thing.

Farmers markets are open and the abundance of what the season has to offer is displayed.


All the beautiful vibrant colors, sweetness

of the fruit and crispness of the veggies awaits a taste.


Being outdoors is a main stay for many.


Meals can tend to be lighter but still meet the need to fill a family up.


I have many favorite websites with menus/recipes that I have used and or look to for inspiration.


Eating well is one of my favorites.







This celery pear salad is crisp and crunchy, different and delicious

(could substitute apple if your kids were more inclined to eat that.

(A red apple is sweeter generally that would be the best choice)










Grilled artichokes , always a find this time of year. A little more time consuming but easy and great as a left over too. (lemons from my tree are so abundant this year after all the rain this winter)

And of course sweet corn is always abundant and delicious for a dinner side dish.

The leftovers, cut off the cob can always be added to salads and the likes

are always a favorite here,

with some lime and salsa delicious bites await.

As this cooks quickly ,dinner is on the

table in no time.


I use chicken tenders that are all ready to go, no cutting involved.


Could add hotter peppers too for a spicier bite.



And FYI , its not uncommon for me to buy a rotisserie chicken and use the meat for various quick meals. (chicken salad, enchiladas , chicken melts , quesadillas , add to favorite pasta etc.)



For many summer is a quick season , enjoy while you can and do take advantage of the seasonal foods.
