Frozen treat to fill the sweet tooth

Chocolate covered peanut butter banana bites

4 ingredients...

3 Bananas, not too ripe (large makes about 30)

1/3 cup Peanut butter, natural is best but whatever you have on hand (any other nut/seed butter works too. They may be runnier so use a bit less on each banana slice)

1/2 cup Dark chocolate chips ( or whatever your favorite chocolate is)

2 tsp Coconut oil

  1. line a baking sheet with parchment paper or use a shallow tupperware with lid

  2. Place about 1/2 teaspoon of peanut butter (or various butters) on a banana slice and top with another banana slice.

  3. Keep doing this until all banana slices are used (about 30 bites).

  4. Place bites on two parchment-lined baking sheets or shallow lined tupperware containers and place them in the freezer to harden for about 1 hour. I like to use a shallow tupperware with lid but use what you have.

  5. Once banana bites have been in the freezer for about an hour, melt your chocolate by adding chocolate and coconut oil to a microwave-safe bowl. Microwave for 1 minute on medium stir , microwave in additional 30-second increments until chocolate is completely melted. This shouldn’t take more than 2 minutes of microwave time.

  6. Once the chocolate is melted, remove one banana bite from container and

  7. Dip each one into the melted chocolate so that half of each bite is coated.

  8. Place chocolate-covered bites back on the parchment-lined sheet or container.

  9. Place the finished container or sheet back in the freezer to harden up,

  10. grab your second platter and continue

  11. At this point, you’re ready to enjoy or you can transfer the bites into a freezer-safe storage container for later.

  12. They should last a least 1-2 months in the freezer

Note: When the banana bites have been frozen for a longer period of time, they will be hard so you’ll want to take them out the freezer and let them thaw for about 5 minutes before eating.
