Tonight I wanted something quick and delicious to eat.
We are HUGE fans of Mexican inspired flavors and as it was
cool today with a bit of rain so I felt that soup was in order.
When I am feeling like I want flavor without a lot of time
cooking I turn to the pantry to get creative.
Recipe for Mexican ground turkey soup
1lb ground turkey
1 cup favorite jarred salsa
ground cumin , smoked paprika, garlic powder, chili powder, oregano
Mexican hot sauce, can corn, 1 cup shredded carrots (I buy the ones
already shredded from Traders joes)
2 boxes of low sodium chicken broth
Over medium-high heat....
Brown meat in large soup pot <moving it around the pan to evenly
brown while adding flavor to the pot
once browned (about 10 minutes give or take)
add corn /salsa and all the other seasonings.
(about a tsp to tbsp for each spice) see note

stir and reduce heat cooking for approximately 1 hour so the flavors have a chance to sit and meld together.
Serve with crema, avocado slices, shredded Mexican cheese, crunchy tortillas
Note: I'm big on my teaching my clients to experiment with recipes, that cooking from a recipe is a starting point and to be creative.
Use more garlic or less cumin. Add more hot sauce.
, You know what you like to eat so express that.
Especially with soup there is lots of room to experiment .
