I love soup, easy to make and not a lot of clean up.
There are many ways (recipes) to create a delicious soup
that is both tasty and satisfying.
Its really one of those dishes that I tell my clients or students that
"sky's the limit" use your imagination.
Add what you have on hand and love to eat.
Best tip: have stock on hand so you can always create a fast soup
Whether it vegetable stock, beef or chicken, miso or otherwise.
For tonight's dinner I've created a take on cabbage rolls.
Well, more of a lazy cabbage roll I guess as its not the traditional ingredients nor method of creating it.
But certainly yummy and inexpensive.
Using some store help with purchased ingredients this comes together fast and dinner will be on the table in an hour.
Purchasing a low salt and lower sugar spaghetti sauce and lower sodium chicken stock
(the broth I use has no salt) gives this soup a healthier start . These ingredients help to flavor balance and give that simmered all day flavor without all the days work.
Lazy Cabbage Roll Soup
-1 lbs ground turkey
-1 tbsp olive oil
-16oz /18 oz jar of favorite spaghetti or -marina sauce (low sugar/salt if possible)
- 2 cups lower sodium chicken broth
-2 medium zucchini's - diced
-shredded carrots - large handful (2 medium carrots) I like the texture of shredded better than chopped as they kind of melt into soup
-medium head of rinsed napa cabbage (cut into small pieces)
-garlic cloves ( as many as you like) I use at least 8 for this big pot of soup)
-garlic powder ( I use at least 3 tbsp as we love garlic and want the flavor)
-2 tbsp's of ground oregano
-dash of ground cumin
-1/4 cup of red wine (whatever you may have open) Can omit also
-splash of balsamic vinegar (rounds the flavor out)
- 2 handfuls of fresh baby spinach or more should you prefer
on higher heat
- add olive oil
- brown the ground turkey ( 5 to 8 minutes app)
- turn heat to medium high ( always watching, don't want to burn
as all stoves are different in they're heat ways)
- add shredded carrot , fresh garlic, oregano,, cumin, garlic powder, zucchini
- keep moving the meat and carrots, once browned add the wine if using and balsamic
vinegar >turn up heat for a few moments for the wine to absorb and alcohol to cook off
- reduce heat again to medium high
- add marina or spaghetti sauce, once jar is dumped in add full jar of water as well
- add stock
- add cabbage
mix well
put on lid
cook for 1 hour , stirring after 40 mins
just before I serve I add the spinach
could serve over cooked rice in the bottom of the soup bowl for more traditional cabbage roll flavor/texture
My family prefers buttered bread
By the silence and lots of slurping I'm thinking its a hit.
