Vegetarian Alternatives You’ll Love

If your like me , you get sick of the same old ,same old.

Couldn't possibly eat chicken again scenario.

I try to incorporate a meatless meal whenever I can.

And less face it, the more vegetables you can get yourself and family to eat the better.

This still leads to the "Whats for dinner" question.

And even though I am a Chef ,

I hit many dry days where I can't can't decide what to make or lets face it ,

I don't want to cook.

After all I'm a tired mom too.

I'm very diligent about my grocery lists and what needs to be replaced

but I also like to plan ahead for the weeks meals.

I find staying organized I'm more likely to mix it up and give us

variety for my family dinners.


Recipe time

We like eggplant around here and my eggplant pizza's are a hit.

With a salad and you've got a simple dinner that is easy

to assemble and prepare.

Oven ready.


Serves 4

preheat oven to 350


wash and cut up 2 medium purple Italian eggplants (fatter bulbed ones)

Use sharp knife and cut into 1 inch slices either a round piece or length wise for a longer piece.


if the eggplant has many seeds it may be bitter,

salt each piece a bit and let it sweat out the bitterness

(couple minutes) you'll see the moisture bead.

rinse each piece and dry well.



on a parchment lined sheet pan place the slices


now you can build your pizza's (fun to have kids help here too)





marinara sauce, tomato sauce (whatever you have on hand)

garlic powder, dried oregano , basil leaves (your favorite pizza flavors)

cheese - sky's the limit here

(fresh mozzarella and basil yum) (Mexican cheese)

Italian cheese blend)

Basically creating whatever flavor profile you want


once the pan is ready for the oven , bake for 18 to 20 minutes

(depends on size and length choice) want the eggplants cooked

but not mushy.


will be very hot, careful
