Home made marshmellows a few ways....

Looking over various sites I found a number of ways to make home made marshmellows.

I've heard that once you have eaten a homemade one you'll never want a store bought again (true for so many food items certainly.)

I have yet to make my own.

As I have a 2 year old I'm concerned about making anything that gets so hot and sticky.

I do intend to try as there are so many options for flavors and of course the various versions to be made.

Some of my favorite candies are marshmallows. Actually, I should backtrack a bit and say at the very top of my all-time favorite things to eat are marshmallows. I love their pillowy softness and their tender sweetness with undertones of vanilla. If it sounds like I’m getting a little Proustian for them, you’re right. I recently made several batches for some projects, which not only rekindled my love of them, but when I brought them to a few parties, people were stunned at how good they were and could not stop raving.

We don’t do candy and for the most part, we avoid sweets, but sometimes I let my kids have sweet treats, especially if we are going to be somewhere that junk food is abundant and I want a healthier alternative for them.

This is how my homemade marshmallows came about… The kids actually got the idea from a cooking show they saw, and since I was not going to use the corn syrup and sugar that the TV recipe suggested, the experimenting began.

Ingredients In Marshmallows:

Commercially-manufactured marshmallows can include the following, ingredients, (these are listed on the label of a store-bought brand): corn syrup, sugar, modified corn starch, dextrose, water, gelatin, tetrasodium pyrophosphate (a thickener or emulsifier), artificial flavor, and blue 1 (coloring additives will vary between brands and styles). You can make your own marshmallows using cornstarch, confectioners sugar, unflavored gelatin, water, granulated sugar, light corn syrup, salt, vanilla extract. And here is another recipe for homemade marshmallows: Homemade Marshmallows .75 oz (21 g) unflavored gelatin (3 envelopes of Knox gelatin) 1/2 cup cold water 2 cups granulated sugar 2/3 cups light corn syrup 1/4 cup water 1/4 teaspoon salt 1 tablespoon vanilla extract Line 9 x 9 inch (23 x 23 cm) pan with plastic wrap and lightly oil it. Set aside. In the bowl of an electric mixer, sprinkle gelatin over 1/2 cup cold water. Soak for about 10 minutes. Meanwhile, combine sugar, corn syrup and 1/4 cup water in a small saucepan. Bring the mixture to a rapid boil and boil hard for 1 minute. Pour the boiling syrup into soaked gelatin and turn on the mixer, using the whisk attachment, to high speed. Add the salt and beat for 12 minutes; add the vanilla extract and beat to incorporate. Scrape marshmallow into the prepared pan and spread evenly (Lightly greasing your hands and the spatula helps a lot here). Take another piece of lightly oiled plastic wrap and press lightly on top of the marshmallow, creating a seal. Let mixture sit for a few hours, or overnight, until cooled and firmly set. In a shallow dish, combine equal parts cornstarch (or rice flour) and confectioners' sugar. Remove marshmallow from pan and cut into equal pieces with scissors (the best tool for the job), a chef's knife, or sharp pizza cutter. It helps to oil the cutter, just wipe some oil across the blade(s) with a paper towel. Dredge each piece of marshmallow in confectioners' sugar mixture. Store in an airtight container. Makes about 40 large marshmallows, depending on the size you choose to cut them.
